- 2 tablespoons olive oil
- 4 (6-ounce) pork chops
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup apple cider
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh thyme leaves
- Pat the pork chops dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the pork chops for 3-4 minutes per side, until golden brown. Remove pork chops from skillet and set aside.
- Add apple cider, apple cider vinegar, brown sugar, and Dijon mustard to the skillet. Stir to combine.
- Bring the glaze to a simmer and cook for 5-7 minutes, or until slightly thickened.
- Return the pork chops to the skillet. Spoon the glaze over the chops.
- Add thyme leaves to the skillet.
- Cover and simmer for 5-10 minutes, or until pork chops are cooked through (internal temperature of 145°F).
- Serve the pork chops with the glaze spooned over them.
Notes
- For thicker chops, you may need to increase the simmering time.
- You can substitute honey for brown sugar for a different sweetness.
- Fresh rosemary can be used instead of thyme.
