Ingredients
Scale
1 cup rolled oats
2 cups water or milk (dairy or non-dairy)
1 large apple, peeled and diced
1 tablespoon butter or coconut oil
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons brown sugar (or maple syrup)
1/4 teaspoon salt
Optional topping: extra cinnamon, chopped walnuts
Instructions
Peel and dice the apple into small pieces.
In a small skillet, melt the butter or oil over medium heat. Add the diced apple, cinnamon, and nutmeg. Sauté for 5 to 7 minutes until the apples soften slightly. Set aside.
In a medium saucepan, combine the rolled oats, water or milk, brown sugar, and salt.
Bring the mixture to a boil over medium-high heat, stirring occasionally.
Reduce the heat to low and simmer for 5 to 7 minutes, stirring frequently, until the oats are creamy and the liquid is absorbed.
Remove the oatmeal from the heat. Stir half of the sautéed apple mixture into the oatmeal.
Divide the oatmeal into bowls. Top each serving with the remaining sautéed apples and any desired extra toppings.
Notes
For a richer flavor, substitute half of the water with milk.
If you prefer a thicker texture, use less liquid or cook for a few extra minutes.
For a baked version, combine all ingredients (except the topping apples) in a baking dish and bake at 375°F (190°C) for 30 minutes.
