Ingredients
Scale
2 cups cooked, shredded chicken breast
2 large ripe avocados, mashed
1/4 cup plain Greek yogurt (optional, for extra tang and protein)
1/4 cup finely diced red onion
1/2 cup finely diced celery
2 tablespoons fresh lime juice
1 tablespoon Dijon mustard
1/4 cup chopped fresh cilantro or parsley
Salt and black pepper to taste
Instructions
Place the shredded chicken in a large mixing bowl.
In a separate small bowl, mash the ripe avocados until mostly smooth. Stir in the Greek yogurt, if using.
Add the mashed avocado mixture, lime juice, and Dijon mustard to the chicken. Mix gently until just combined. You want some texture remaining.
Fold in the diced red onion, celery, and fresh cilantro or parsley.
Season generously with salt and black pepper. Taste and adjust seasoning as needed.
For the best flavor, cover the bowl and chill the avocado chicken salad for at least 15 minutes before serving.
Serve immediately on lettuce wraps, crackers, or toast.
Notes
For a Paleo chicken salad, omit the Greek yogurt.
If you want a crunchier texture, add 1/4 cup of chopped pecans or walnuts.
This recipe is excellent for meal prep; store it in an airtight container in the refrigerator for up to 3 days. The lime juice helps keep the avocado green.
If you are making this for keto chicken salad, check your Dijon mustard label for added sugar content.
