Make tender zucchini slices incredibly crispy and cheesy with this easy oven-baked recipe. It is a quick, low-carb side dish or healthy appetizer perfect for weeknights.

Ingredients

Scale
  • 3 medium zucchini
  • 1 large egg
  • 1 tablespoon water
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper. This step helps prevent sticking and promotes crispiness.
  2. Wash the zucchini and slice them into rounds about 1/4 inch thick. You can also cut them into spears if you prefer.
  3. Set up a dredging station with three shallow bowls. In the first bowl, whisk the egg and water together.
  4. In the second bowl, combine the flour, salt, and pepper. Mix well.
  5. In the third bowl, mix the grated Parmesan cheese and garlic powder.
  6. Dip each zucchini slice first into the flour mixture, shaking off any excess.
  7. Next, dip the floured slice into the egg wash, letting excess drip off.
  8. Finally, press the slice firmly into the Parmesan mixture to coat both sides completely.
  9. Arrange the coated zucchini pieces in a single layer on the prepared baking sheets. Do not let them touch.
  10. Bake for 10 minutes.
  11. Carefully flip each piece over.
  12. Bake for another 8 to 10 minutes, or until the zucchini is tender and the Parmesan crust is golden brown and crispy.
  13. Remove from the oven and serve immediately as a delicious, cheesy zucchini bite.

Notes

  • For extra crispiness, Ethan suggests letting the coated zucchini sit on the baking sheet for 5 minutes before baking. This allows the coating to adhere better.
  • If you are using very large zucchini, consider scooping out some of the seeds before coating to reduce moisture content.
  • This recipe works well as a Keto friendly zucchini side if you substitute the flour with almond flour.
