Ingredients
Scale
2 tablespoons unsalted butter
1/2 cup packed light brown sugar
1/4 cup dark rum (for flambé)
1/2 teaspoon ground cinnamon
4 medium ripe bananas, peeled and sliced lengthwise
1/4 cup banana liqueur (optional, for deeper flavor)
1/2 teaspoon vanilla extract
Pinch of salt
Vanilla ice cream, for serving
Instructions
Place the butter and brown sugar in a large skillet over medium heat. Stir constantly until the butter melts and the sugar dissolves, creating a smooth sauce.
Stir in the cinnamon and salt. Let the mixture bubble gently for about one minute.
Add the sliced bananas to the skillet. Cook for about 1 to 2 minutes per side until the bananas are heated through and lightly coated in the sauce. Do not overcook them; you want them warm, not mushy.
Remove the skillet from the heat. Carefully pour in the dark rum and the banana liqueur, if using. Return the skillet to the heat.
Tilt the pan slightly toward the flame (if using a gas stove) or use a long match to ignite the rum. Allow the flames to burn out naturally. This is the flambé step. If you are uncomfortable with flambé, simply let the alcohol cook off for one minute.
Stir in the vanilla extract once the flames subside.
Serve immediately over scoops of cold vanilla ice cream. This warm banana dessert is best enjoyed right away.
Notes
For the best results, use firm, ripe bananas. They hold their shape better during cooking.
If you skip the flambé, let the rum simmer for about 60 seconds to cook off the raw alcohol taste before serving.
This recipe is a fantastic copycat of the famous Brennan’s restaurant dessert.
If you need a vegan bananas foster alternative, substitute the butter with vegan butter and use a non-alcoholic rum substitute or extra banana liqueur.
