Make soft, decadent cookies that taste just like Boston Cream Pie, featuring a vanilla cookie base, a creamy pastry cream center, and a rich chocolate glaze topping.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup prepared pastry cream or thick vanilla pudding
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving space between them. Flatten slightly with the bottom of a glass.
  5. Bake for 9 to 11 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
  6. Prepare the chocolate glaze: Place chocolate chips in a heatproof bowl. Heat the heavy cream until it simmers, then pour it over the chocolate chips. Let stand for 5 minutes, then whisk until smooth.
  7. To assemble, take one cooled cookie. Place about 1 teaspoon of pastry cream onto the flat side of the cookie. Top with a second cookie to create a sandwich.
  8. Dip the top edge of the cookie sandwich into the chocolate glaze, allowing excess to drip off. Place back on the rack to set the glaze.

Notes

  • For the pastry cream, use a store-bought version for speed, or make a thick vanilla pudding from scratch.
  • Chill the assembled cookies for 15 minutes after glazing to help the chocolate set quickly.
  • You can use a piping bag to neatly fill the center of the cookies with the cream.
