Ingredients

Scale
  • 2 boneless, skinless chicken breasts, halved horizontally
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • Vegetable oil, for frying (about 1 inch deep in pan)
  • 4 brioche or potato buns
  • 1/2 cup mayonnaise
  • 1 tablespoon hot sauce
  • 1 teaspoon smoked paprika
  • 4 slices dill pickle
  • 1/2 cup shredded lettuce

Instructions

  1. Slice chicken breasts horizontally to create four thin cutlets. Pat them completely dry with paper towels.
  2. In a shallow dish, whisk together the flour, cornstarch, Cajun seasoning, salt, and pepper. This is your dry mix.
  3. In a second shallow dish, whisk the eggs and milk together. This is your wet mix.
  4. Dip each chicken cutlet first into the wet mix, letting excess drip off.
  5. Dredge the cutlet thoroughly in the dry mix, pressing the flour onto the chicken to create a thick coating. Set aside on a rack.
  6. In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350 degrees Fahrenheit.
  7. Carefully place the coated chicken into the hot oil, ensuring not to overcrowd the pan. Fry for 4 to 6 minutes per side, until golden brown and cooked through (internal temperature reaches 165 degrees Fahrenheit).
  8. Remove chicken and place on a wire rack set over a baking sheet to drain excess oil.
  9. While chicken drains, mix the mayonnaise, hot sauce, and smoked paprika in a small bowl for the spicy mayo.
  10. Lightly toast the cut sides of the buns in a dry pan or under the broiler.
  11. Assemble the sandwiches: Spread spicy mayo on both halves of each bun. Place lettuce and pickles on the bottom bun. Top with a crispy chicken cutlet, then place the top bun on. Serve immediately.

Notes

  • For an air fryer method, spray the coated chicken lightly with cooking spray and cook at 380 degrees Fahrenheit for 12 to 15 minutes, flipping halfway.
  • You can substitute the mayonnaise mixture with your favorite store-bought spicy sauce.
  • Use thin-cut chicken for faster, more even cooking.
