Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound small red potatoes, quartered
  • 1 pound smoked sausage (like Kielbasa), cut into 1-inch pieces
  • 2 ears of corn, husked and cut into 2-inch pieces
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions

  1. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  2. Tear off four large sheets of heavy-duty aluminum foil.
  3. Divide the potatoes and sausage evenly among the four foil sheets, placing them in the center.
  4. Top the potatoes and sausage with the corn pieces.
  5. In a small bowl, whisk together the melted butter, Cajun seasoning, garlic powder, and smoked paprika.
  6. Pour the butter mixture evenly over the ingredients in each foil packet.
  7. Season with salt and pepper to your liking.
  8. Bring the edges of the foil together and crimp tightly to create sealed packets. Ensure there are no gaps to prevent steam from escaping.
  9. Place the foil packets directly on the grill grates or on a baking sheet in the oven.
  10. Grill for 15-20 minutes or bake for 20-25 minutes, or until the potatoes are tender and the shrimp are pink and cooked through.
  11. Carefully open the foil packets (watch out for steam!).
  12. Garnish with fresh parsley and serve immediately with lemon wedges if desired.

Notes

  • For extra flavor, you can add chopped onion or bell peppers to the packets.
  • Adjust the amount of Cajun seasoning to control the spice level.
  • If grilling, make sure your foil is heavy-duty to prevent tearing.
