Ingredients
Scale
1 cup popcorn kernels
1/2 cup vegetable oil
1 cup light brown sugar, packed
1/2 cup butter
1/4 cup corn syrup
1 teaspoon vanilla extract
1/2 teaspoon salt
Instructions
Pop the popcorn. Heat vegetable oil in a large pot over medium-high heat. Add popcorn kernels, cover, and shake the pot occasionally until popping slows to 2-3 seconds between pops. Pour into a large bowl.
Make the caramel. In a medium saucepan, combine brown sugar, butter, and corn syrup. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved. Bring to a boil and cook for 5 minutes, stirring occasionally.
Add flavor. Remove from heat and stir in vanilla extract and salt.
Coat the popcorn. Pour the hot caramel evenly over the popped popcorn. Stir gently to coat all the pieces.
Bake. Spread the caramel corn in a single layer on a baking sheet lined with parchment paper. Bake in a preheated oven at 250°F (120°C) for 1 hour, stirring every 15 minutes.
Cool. Let the caramel corn cool completely on the baking sheet before breaking it apart.
Notes
For extra flavor, you can add a pinch of cinnamon to the caramel mixture.
Store leftover caramel corn in an airtight container at room temperature.
