Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 can (10.5 ounces) condensed cream of celery soup
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup uncooked long-grain white rice
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. In a large bowl, combine the browned beef and onion mixture, cream of mushroom soup, cream of celery soup, water, salt, and pepper. Mix well.
  4. Stir in the uncooked rice until everything is evenly distributed.
  5. Pour the mixture into the prepared baking dish.
  6. Cover the dish tightly with aluminum foil.
  7. Bake for 45 minutes.
  8. Remove the foil. Sprinkle the cheddar cheese and Monterey Jack cheese evenly over the top of the casserole.
  9. Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the rice is tender.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • For added flavor and texture, stir in 1 cup of frozen peas and carrots with the rice mixture before baking.
  • You can substitute the cream of mushroom soup with cream of chicken soup if desired.
  • This casserole can be assembled a day ahead. Cover and refrigerate, then add 10-15 minutes to the initial covered baking time.
