Make simple, satisfying ground beef tacos featuring a rich, creamy cheese sauce mixed directly into the seasoned meat.

Ingredients

Scale
  • 1 pound ground beef (80/20 recommended)
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 4 ounces cream cheese, softened and cubed
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream
  • 12 hard taco shells or soft tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, extra shredded cheese

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
  2. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Stir in the taco seasoning mix and water. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces slightly.
  4. Reduce the heat to low. Add the cubed cream cheese to the meat mixture. Stir continuously until the cream cheese melts completely and incorporates into the meat, creating a creamy texture.
  5. Remove the skillet from the heat. Stir in the shredded Monterey Jack cheese and sour cream until fully combined and melted into the filling. This creates your creamy, cheesy filling.
  6. Warm your taco shells or tortillas according to package directions.
  7. Spoon the creamy ground beef filling into the taco shells. Top with your desired lettuce, tomatoes, and extra cheese. Serve immediately.

Notes

  • For a thicker sauce, use less water when simmering the meat.
  • If you prefer a sharper cheese flavor, substitute half of the Monterey Jack with sharp cheddar.
  • To prevent the filling from becoming watery, ensure you drain the grease from the beef thoroughly before adding liquids or cheese.
