A straightforward recipe combining grilled chicken, crisp romaine lettuce, Parmesan cheese, and pasta tossed in a creamy Caesar dressing.

Ingredients

Scale
  • 1 pound rotini or penne pasta
  • 2 large boneless, skinless chicken breasts, cooked and shredded or diced
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 1 cup creamy Caesar dressing (homemade or store-bought)
  • 1/4 cup croutons (add just before serving)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta immediately and rinse thoroughly with cold water to stop the cooking process. Set aside to cool completely.
  2. In a large bowl, whisk together the Caesar dressing, lemon juice, Dijon mustard, and black pepper until well combined. This step helps thin the dressing slightly for better pasta coating.
  3. In the large bowl with the dressing, add the cooled pasta, cooked chicken, chopped romaine lettuce, and 1/2 cup of grated Parmesan cheese.
  4. Toss gently until all ingredients are evenly coated with the dressing.
  5. Cover the bowl and chill the salad for at least 30 minutes before serving to allow the flavors to meld.
  6. Just before serving, add the croutons and toss lightly one last time. Top with extra grated Parmesan cheese.

Notes

  • To prevent sogginess if making ahead, store the lettuce separately and add it just before serving.
  • For a richer flavor, use rotisserie chicken instead of cooking chicken breasts.
  • If you prefer a tangier salad, add 2 tablespoons of drained, chopped sun-dried tomatoes during the final toss.
