Ingredients

Scale
  • 10 ounces dried egg noodles
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce (for marinating chicken)
  • 1 teaspoon cornstarch (for marinating chicken)
  • 2 tablespoons vegetable oil, divided
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1/2 cup sliced onion
  • 2 cloves garlic, minced
  • 1/4 cup low sodium soy sauce (for sauce)
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce (for color)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground white pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the egg noodles according to package directions until tender but still slightly firm. Drain them well and toss with 1 teaspoon of vegetable oil to prevent sticking. Set aside.
  2. In a small bowl, toss the cut chicken pieces with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Let this marinate while you prepare the vegetables.
  3. Prepare the chow mein sauce: In a separate small bowl, whisk together the 1/4 cup low sodium soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and white pepper. Set the sauce aside.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until it is cooked through and lightly browned, about 4 to 5 minutes. Remove the chicken from the skillet and set it aside.
  5. Add the remaining 1 tablespoon of vegetable oil to the hot skillet. Add the onion, carrots, cabbage, and mushrooms. Stir fry the vegetables for 3 to 4 minutes until they become crisp-tender.
  6. Add the minced garlic to the vegetables and cook for 30 seconds until fragrant.
  7. Return the cooked chicken to the skillet. Add the cooked noodles and pour the prepared savory asian noodles recipe sauce over everything.
  8. Toss everything together quickly and constantly for 1 to 2 minutes until the noodles and ingredients are evenly coated and heated through. Do not overcook the noodles.
  9. Remove the stir fry chicken noodles from the heat. Garnish with sliced green onions. Serve this quick chow mein recipe immediately for the best takeout style chow mein experience.

Notes

  • For extra flavor, Ethan suggests adding a small pinch of ground ginger to the chicken marinade. This small addition really boosts the savory profile.
  • If you prefer softer noodles, cook them a minute longer, but remember that they will continue to soften slightly when tossed with the hot sauce.
  • This recipe is a fantastic healthy chow mein alternative; feel free to add other crisp vegetables like broccoli florets or snow peas.
