A simple, moist, and rich vegan banana bread recipe featuring chocolate chips that appeals to both plant-based eaters and omnivores.

Ingredients

Scale
  • 3 large very ripe bananas, mashed
  • 1/2 cup plant-based milk (soy or almond work well)
  • 1/3 cup melted coconut oil or neutral oil
  • 3/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup vegan chocolate chips, divided

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Whisk in the plant-based milk, melted oil, brown sugar, and vanilla extract into the mashed bananas until combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients. Mix only until just combined; do not overmix the batter.
  6. Gently fold in 3/4 cup of the chocolate chips.
  7. Pour the batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  9. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

Notes

  • Use bananas with many brown or black spots for the best moisture and sweetness.
  • If you do not have brown sugar, you can substitute with granulated sugar, but the molasses flavor will be reduced.
  • For a richer flavor, use full-fat coconut milk instead of thinner plant milks.
