A simple recipe for a moist quick bread featuring a rich cinnamon swirl and a crunchy cinnamon sugar topping, mimicking the flavor of a baked donut.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1/4 cup packed light brown sugar
  • 1 tablespoon ground cinnamon (for swirl)
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  6. In a small bowl, mix the 1/4 cup brown sugar and 1 tablespoon cinnamon for the swirl.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon sugar mixture evenly over the batter. Top with the remaining batter.
  8. Use a knife to gently swirl the cinnamon mixture through the batter a few times.
  9. In a small bowl, mix the 1/2 cup granulated sugar and 1 tablespoon cinnamon for the topping. Sprinkle this mixture evenly over the top of the batter.
  10. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For an extra moist loaf, you can substitute the milk with buttermilk.
  • If the topping starts to brown too quickly, loosely tent the loaf with aluminum foil for the last 15 minutes of baking.
  • This bread tastes best when served slightly warm.
