Ingredients
Scale
1 pound large shrimp, peeled and deveined
1 large egg white
1/4 cup cornstarch
1/4 cup all-purpose flour
1/2 teaspoon salt
Vegetable oil, for frying
1 cup walnut halves
1 tablespoon granulated sugar
1 tablespoon water
1/2 cup mayonnaise
1/4 cup honey
1 tablespoon sweetened condensed milk
1 teaspoon rice vinegar
1/4 teaspoon lemon juice
1/2 cup canned peach slices or pineapple chunks, drained
Instructions
Prepare the shrimp: Pat the shrimp dry. In a bowl, whisk the egg white until slightly frothy. Add the shrimp and toss to coat. In a separate shallow dish, mix the cornstarch, flour, and salt. Dredge the shrimp in the flour mixture, shaking off excess.
Make the candied walnuts: Heat a small non-stick skillet over medium heat. Add walnuts, sugar, and water. Stir constantly until the water evaporates and the sugar coats the walnuts, about 3 to 5 minutes. Spread the coated walnuts on parchment paper to cool completely.
Fry the shrimp: Heat about 2 inches of oil in a deep pot or Dutch oven to 350°F (175°C). Fry the shrimp in batches until golden brown and cooked through, about 2 to 3 minutes per batch. Remove with a slotted spoon and drain on a wire rack lined with paper towels.
Make the sauce: In a medium bowl, whisk together the mayonnaise, honey, sweetened condensed milk, rice vinegar, and lemon juice until smooth and creamy.
Combine: In a large bowl, gently toss the hot, crispy shrimp with the honey sauce until lightly coated. Add the drained peaches or pineapple.
Serve immediately: Toss in the cooled candied walnuts just before serving to keep them crunchy.
Notes
For extra crispiness, double-fry the shrimp: Fry once until pale, remove, let rest for 5 minutes, then fry again until golden brown.
Do not add the walnuts until the very end; they will soften if mixed into the sauce too early.
Use whole milk mayonnaise for the richest sauce flavor.
