Make light and fluffy pancakes using cottage cheese for a high-protein breakfast that cooks quickly.

Ingredients

Scale
  • 1 cup cottage cheese (full fat or low fat)
  • 2 large eggs
  • 1/4 cup all-purpose flour (or gluten-free blend)
  • 1 teaspoon baking powder
  • 1 tablespoon sweetener (sugar or maple syrup)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray or butter for the griddle

Instructions

  1. Place the cottage cheese, eggs, flour, baking powder, sweetener, vanilla extract, and salt into a blender.
  2. Blend on high speed until the mixture is completely smooth and creamy. Scrape down the sides if necessary.
  3. Heat a non-stick griddle or large skillet over medium heat. Lightly coat the surface with cooking spray or butter.
  4. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  5. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip carefully.
  6. Cook the second side for another 1 to 2 minutes until golden brown.
  7. Serve immediately with your preferred toppings.

Notes

  • For fluffier pancakes, let the batter rest for 5 minutes before cooking.
  • If you prefer a thicker batter, add 1 more tablespoon of flour.
  • To make these low carb or keto, substitute the flour with 1/4 cup almond flour.
  • You can add 1 tablespoon of lemon zest to the batter for brightness.
