Follow this recipe to make genuinely crispy chicken wings baked until golden, then toss them in a rich, homemade garlic Parmesan sauce.

Ingredients

Scale
  • 3 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top of the sheet.
  2. Pat the chicken wings completely dry using paper towels. This step is key for crispiness.
  3. In a large bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated. The baking powder helps dry out the skin.
  4. Arrange the wings in a single layer on the wire rack. Do not let them touch.
  5. Bake for 25 minutes. Flip the wings over, and bake for another 20 to 25 minutes, or until the skin is deeply golden brown and crisp.
  6. While the wings finish cooking, prepare the sauce. Melt the butter in a small saucepan over medium heat.
  7. Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not let the garlic brown.
  8. Remove the saucepan from the heat. Whisk in the grated Parmesan cheese until the sauce is smooth.
  9. Place the hot, crispy wings into a large, clean bowl. Drizzle the garlic Parmesan sauce over the wings.
  10. Toss gently but quickly to coat all the wings evenly.
  11. Transfer the sauced wings to a serving platter and sprinkle with fresh parsley. Serve immediately to maintain crispness.

Notes

  • For extra crispiness, you can use an air fryer set to 380°F (195°C) for 18-20 minutes, shaking the basket halfway through.
  • If you prefer a thinner sauce, add 1 tablespoon of olive oil to the melted butter mixture before adding the cheese.
  • Serve with celery sticks and blue cheese dressing on the side.
