Follow this straightforward recipe to make chicken drumsticks crispy on the outside and coated in a sticky honey garlic glaze, baked entirely in your oven.
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with foil and place a wire rack on top of the foil.
In a medium bowl, toss the dried drumsticks with baking powder, salt, and pepper until evenly coated. This step helps dry the skin for crisping.
Arrange the drumsticks in a single layer on the wire rack.
Bake for 25 minutes.
While the chicken bakes, prepare the sauce. In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, and ginger. Bring the mixture to a simmer over medium heat.
In a separate small bowl, whisk together the cornstarch and cold water to create a slurry. Pour the slurry into the simmering sauce, whisking constantly until the sauce thickens, about 1 minute. Remove from heat.
After the initial 25 minutes of baking, brush half of the honey garlic sauce evenly over the drumsticks.
Return the chicken to the oven and bake for another 10 minutes.
Remove the chicken, brush with the remaining sauce, and bake for a final 5 minutes until the glaze is sticky and the skin is deeply browned and crisp.
Let the chicken rest for 5 minutes before serving.
Notes
Patting the chicken skin completely dry before seasoning is the most important step for achieving crispiness in the oven.
Use a wire rack to allow air to circulate completely around the drumsticks during baking.
If the glaze seems too thick after cooling slightly, add a teaspoon of water to thin it before brushing on the final coat.
