Ingredients

Scale
  • 1 pound ground beef or Italian sausage
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) can crushed tomatoes, undrained
  • 4 cups beef broth
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked lasagna noodles, broken into 1-inch pieces
  • 1 cup water
  • 1 (15 ounce) container ricotta cheese, divided
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Place the ground meat, marinara sauce, crushed tomatoes, beef broth, Italian seasoning, garlic powder, salt, and pepper into the slow cooker. Stir to combine.
  2. Cook on low for 4 hours or on high for 2 hours.
  3. Stir in the broken lasagna noodles and water. Cook on low for an additional 1 to 1.5 hours, or until the pasta is tender.
  4. Stir the soup gently before serving.
  5. Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese, a sprinkle of mozzarella cheese, and a sprinkle of Parmesan cheese. Allow the cheese to melt slightly before eating.

Notes

  • For a creamier soup, stir in 1/2 cup of heavy cream during the last 30 minutes of cooking.
  • You can substitute ground turkey for beef or sausage.
  • If you do not have lasagna noodles, use medium shells or rotini pasta. Adjust cooking time as needed.
