Make this quick and easy Dorito Casserole for a delicious, hearty family meal. It uses ground beef and Nacho Cheese Doritos for a crunchy, cheesy bake perfect for weeknights.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese, divided
  • 1 (4 ounce) can diced green chilies, drained
  • 1 bag (9.25 ounces) Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. In a large bowl, combine the cooked beef mixture, cream of chicken soup, cream of mushroom soup, milk, taco seasoning, one and a half cups of the shredded cheddar cheese, and drained green chilies. Mix until everything is well combined.
  4. Fold in about two-thirds of the lightly crushed Doritos into the meat mixture.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Sprinkle the remaining half cup of shredded cheddar cheese over the top of the casserole.
  7. Bake for 20 minutes.
  8. Remove the casserole from the oven and sprinkle the remaining crushed Doritos over the cheese layer.
  9. Return to the oven and bake for an additional 5 to 10 minutes, or until the cheese is melted and bubbly and the topping is heated through.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • For a richer flavor, use Cool Ranch Doritos instead of Nacho Cheese for a different take on this layered chip casserole.
  • If you want to prevent the bottom layer of chips from getting too soft, mix only half the chips into the meat mixture and layer the rest on top before the final bake.
  • This recipe works well as a simple dump and bake casserole if you brown the meat ahead of time.
