Make easy, high-protein egg bites similar to the Starbucks version using a standard muffin tin and cottage cheese for a fluffy texture.

Ingredients

Scale
  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup shredded cheese (Monterey Jack or Swiss recommended)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup cooked, crumbled bacon (optional)

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit. Lightly grease a 12-cup standard muffin tin.
  2. Combine the cottage cheese and eggs in a blender. Blend until the mixture is completely smooth, about 30 seconds. This step is key for a smooth texture.
  3. Pour the egg mixture into a large bowl. Stir in the shredded cheese, salt, and pepper. If using bacon, gently fold it in now.
  4. Pour the mixture evenly into the prepared muffin cups, filling each cup about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the centers are set and a toothpick inserted comes out clean.
  6. Remove the tin from the oven and let the egg bites cool in the tin for 5 minutes before removing them.

Notes

  • For a smoother texture resembling sous vide, strain the blended egg mixture through a fine-mesh sieve before adding cheese.
  • These egg bites freeze well. Cool completely, then place them in a freezer-safe bag for up to one month. Reheat from frozen in the microwave for 60 to 90 seconds.
  • You can substitute bacon with chopped spinach or diced ham for different flavor variations.
