Prepare a flavorful Cajun shrimp boil easily on a single sheet pan. This recipe combines shrimp, sausage, potatoes, and corn with a rich garlic butter sauce for a simple, crowd-pleasing meal.

Ingredients

Scale
  • 2 lbs large shrimp, peeled and deveined
  • 1 lb smoked sausage (like Andouille or Kielbasa), sliced into 1-inch pieces
  • 1.5 lbs small red potatoes, quartered
  • 4 ears of corn, cut into 2-inch pieces
  • 1 large onion, cut into wedges
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning (or more to taste)
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a large bowl, combine the quartered potatoes and onion wedges. Drizzle with 1 tablespoon of the melted butter and half of the Cajun seasoning. Toss to coat evenly.
  3. Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet.
  4. Bake for 15 minutes to partially cook the potatoes.
  5. While the potatoes bake, prepare the sauce: In a small bowl, whisk together the remaining melted butter, minced garlic, remaining Cajun seasoning, Old Bay seasoning, smoked paprika, and lemon juice.
  6. Remove the baking sheet from the oven. Add the sliced sausage and corn pieces to the pan, distributing them around the potatoes.
  7. In the same bowl used for the sauce, toss the shrimp with half of the prepared garlic butter sauce until coated.
  8. Arrange the sauced shrimp on the baking sheet among the other ingredients. Drizzle the remaining garlic butter sauce over the entire pan.
  9. Return the sheet pan to the oven and bake for another 10 to 12 minutes, or until the shrimp are pink and cooked through and the potatoes are tender.
  10. Remove from the oven. Sprinkle with fresh parsley before serving immediately.

Notes

  • For extra heat, add 1/2 teaspoon of cayenne pepper to the butter sauce.
  • If you prefer a Low Country style, substitute the Cajun seasoning with equal parts salt, black pepper, and celery salt.
  • You can substitute the potatoes with 1 lb of peeled and deveined crawfish tails if available.
