Ingredients
Scale
1 lb boneless, skinless chicken breasts or thighs
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked white rice
1 cup frozen or fresh corn kernels
1/4 cup crumbled cotija cheese (or feta as substitute)
2 tablespoons mayonnaise
1 tablespoon sour cream or Mexican crema
1 tablespoon fresh lime juice
1/2 teaspoon lime zest
1/4 cup chopped fresh cilantro
1 lime, cut into wedges for serving
Instructions
Season the chicken: Rub the chicken pieces with olive oil, chili powder, cumin, salt, and pepper.
Cook the chicken: Grill, pan-fry, or bake the chicken until cooked through (internal temperature reaches 165°F). Let it rest for 5 minutes, then shred or dice it.
Prepare the corn topping: In a small skillet over medium heat, cook the corn kernels until lightly charred or heated through, about 5 minutes. Remove from heat.
Make the crema drizzle: In a small bowl, whisk together the mayonnaise, sour cream/crema, 1 tablespoon of lime juice, and lime zest until smooth.
Prepare the rice: If your rice is plain, toss it with half of the chopped cilantro and a small squeeze of fresh lime juice.
Assemble the bowls: Divide the seasoned rice among four bowls. Top the rice evenly with the cooked chicken.
Add the street corn flavor: Spoon the warm corn mixture over the chicken layer. Sprinkle generously with the crumbled cotija cheese.
Finish the bowl: Drizzle the prepared crema mixture over the top of each bowl. Garnish with the remaining cilantro and serve immediately with a lime wedge.
Notes
For meal prep, cook the chicken and rice ahead of time. Store the corn mixture and crema separately. Assemble just before eating.
If you prefer a spicier flavor, add 1/4 teaspoon of cayenne pepper to the chicken seasoning mix.
You can substitute shredded rotisserie chicken for faster preparation.
