Ingredients

Scale
  • 12 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 12 English muffins
  • 12 slices American cheese
  • 12 slices ham or bacon (cooked)

Instructions

  1. Whisk eggs, milk, salt, and pepper in a bowl.
  2. Melt butter in a non-stick skillet over medium heat.
  3. Pour egg mixture into the skillet and cook, stirring occasionally, until cooked through.
  4. Cut cooked eggs into 12 portions to fit the English muffins.
  5. Toast English muffins.
  6. Assemble sandwiches: place a portion of scrambled eggs, a slice of cheese, and a slice of ham or bacon on the bottom half of each English muffin.
  7. Top with the other half of the English muffin.
  8. Wrap each sandwich individually in plastic wrap and then in foil.
  9. Freeze for up to 1 month.
  10. To reheat, remove foil and plastic wrap. Microwave on high for 1-2 minutes, or until heated through.

Notes

  • You can customize the fillings with your favorite breakfast meats and cheeses.
  • For a healthier option, use whole wheat English muffins and turkey bacon.
  • Ensure sandwiches are completely cooled before wrapping and freezing to prevent condensation.
