Make a rich, thick, and velvety French hot chocolate using high-quality dark chocolate for a luxurious drink.

Ingredients

Scale
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 4 ounces high-quality dark chocolate (70% cacao minimum), finely chopped
  • 1 tablespoon granulated sugar (adjust to taste)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the whole milk and heavy cream in a small saucepan over medium heat. Heat until small bubbles form around the edges, but do not boil.
  2. Remove the saucepan from the heat. Add the finely chopped dark chocolate to the warm milk mixture.
  3. Let the chocolate sit undisturbed for 2 minutes to soften.
  4. Whisk the mixture slowly until the chocolate is completely melted and the liquid is smooth.
  5. Return the saucepan to low heat. Stir in the sugar, vanilla extract, and salt. Heat gently for 1 to 2 minutes, stirring constantly, until the drink is hot and slightly thickened. Do not allow it to boil.
  6. Pour the hot chocolate into mugs immediately.

Notes

  • For an even thicker texture, you can whisk in 1/2 teaspoon of cornstarch mixed with 1 tablespoon of cold milk before heating.
  • Use chocolate bars broken into small pieces rather than chips for the best melt and flavor.
  • Serve immediately with whipped cream or a dusting of cocoa powder, if desired.
