Ingredients

Scale
  • 6 cups chicken broth
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream (or milk for a lighter version)
  • 4 slices thick-cut bread (like sourdough or Italian loaf)
  • 4 tablespoons butter, softened
  • 2 cloves garlic, minced (for bread)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Prepare the garlic bread: Mix the 4 tablespoons of softened butter with the 2 minced garlic cloves and spread evenly over both sides of the 4 bread slices. Toast or bake the bread until golden brown and crisp. Set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the 4 minced garlic cloves and Italian herbs to the pot. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth. Add salt and pepper. Bring the mixture to a simmer and cook for 10 minutes to allow flavors to meld.
  5. Stir in the heavy cream. Heat through but do not boil.
  6. To serve, ladle the hot soup into bowls. Top each serving with one slice of the prepared garlic bread.
  7. Sprinkle the mozzarella and Parmesan cheese over the garlic bread topping. Place the bowls under a broiler for 1-2 minutes, watching closely, until the cheese is melted and bubbly. Serve immediately.

Notes

  • You can cube the garlic bread instead of using whole slices and stir the cubes directly into the soup just before serving for a softer texture.
  • For a richer flavor, use homemade chicken stock.
  • If you prefer a smoother soup, blend half of the soup mixture before adding the cream.
