Make a fast and flavorful Garlic Butter Shrimp Bowl over rice. This recipe uses simple ingredients to create a rich garlic butter sauce for perfectly cooked shrimp.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 cup uncooked long-grain white rice
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth or water
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 teaspoon olive oil

Instructions

  1. Cook the rice according to package directions. Keep warm.
  2. Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook for 1 to 2 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside. Do not overcook.
  4. Reduce the heat to low. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  5. Pour in the chicken broth and lemon juice. Stir well, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 1 minute until slightly reduced.
  6. Return the cooked shrimp to the skillet. Toss gently to coat the shrimp completely in the garlic butter sauce. Cook for 30 seconds just to reheat.
  7. Divide the cooked rice among serving bowls. Top with the garlic butter shrimp and spoon any remaining sauce over the top.
  8. Garnish with fresh chopped parsley before serving.

Notes

  • For the best texture, use medium-high heat when searing the shrimp quickly.
  • If you prefer brown rice, start cooking it before you begin the shrimp preparation as it takes longer.
  • Add 1/4 teaspoon of red pepper flakes to the butter with the garlic for a little heat.
  • Serve with steamed broccoli or sliced avocado for added vegetables in your bowl.
