Ingredients
Scale
1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Pat the steak cubes dry with paper towels. Season them evenly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
Sear the steak for 1 to 2 minutes per side until a brown crust forms. For a medium-rare, juicy center, remove the steak immediately when it reaches this stage.
Remove the seared steak bites from the skillet and set them aside on a clean plate.
Reduce the heat to medium-low. Add the butter to the same skillet.
Once the butter melts, add the minced garlic and thyme. Cook for about 30 seconds until fragrant, stirring constantly. Do not let the garlic burn.
Return the steak bites to the skillet. Toss them gently in the garlic butter sauce for about 30 seconds to coat them completely.
Remove the skillet from the heat. Garnish with fresh parsley before serving immediately.
Notes
For the juiciest results, use a meat thermometer and aim for an internal temperature of 130°F for medium-rare before removing the steak from the heat.
Do not skip drying the steak; this helps achieve a good sear.
If you prefer an air fryer method, cook the seasoned steak cubes at 400°F for 6 to 8 minutes, shaking halfway, then toss with the prepared garlic butter sauce.
