Ingredients
Scale
4 (6 ounce) tilapia fillets
1 tablespoon olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup dry white wine or chicken broth
1/4 cup fresh lemon juice
1 tablespoon fresh parsley, chopped
Salt and black pepper to taste
Instructions
Pat the tilapia fillets dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Add the tilapia fillets to the hot skillet and cook for 3 to 4 minutes per side until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate. Keep warm.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
Pour in the white wine or broth, scraping up any browned bits from the bottom of the pan. Let this simmer for 1 minute.
Stir in the fresh lemon juice. Let the sauce simmer for another minute until it thickens slightly.
Remove the skillet from the heat. Stir in the chopped parsley.
Return the tilapia fillets to the skillet and spoon the lemon butter sauce over the fish. Serve immediately.
Notes
To keep the fish moist, avoid overcrowding the pan when searing. Cook in batches if necessary.
For a richer sauce, you can whisk in one extra teaspoon of cold butter right at the end, off the heat.
Serve this dish with steamed asparagus or rice pilaf.
