A straightforward recipe for flavorful garlic chicken served over rice with fresh vegetables, suitable for a quick dinner or meal prep.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 3 cups cooked white rice
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a medium bowl, combine the chicken pieces, minced garlic, olive oil, soy sauce, oregano, pepper, and salt. Toss to coat the chicken evenly. Let it marinate for at least 10 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 6 to 8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  3. Add the broccoli florets and sliced red bell pepper to the same skillet. Cook for 4 to 5 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the skillet with the vegetables. Drizzle with lemon juice and toss everything together for 1 minute to heat through.
  5. To assemble the bowls, divide the cooked white rice among four bowls. Top the rice evenly with the garlic chicken and vegetable mixture.
  6. Garnish each bowl with fresh chopped parsley before serving.

Notes

  • For meal prepping, store the rice, chicken mixture, and any extra vegetables separately for up to four days.
  • You can substitute brown rice or quinoa for white rice.
  • Use chicken thighs instead of breasts for a richer flavor.
