A simple, no-knead bread recipe baked in a Dutch oven, featuring a rich flavor from fresh garlic and herbs for a crusty exterior and soft interior.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon instant dry yeast
  • 1 1/4 cups cool water
  • 2 cloves garlic, minced finely
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large bowl, whisk together the flour, salt, and yeast.
  2. Add the cool water, minced garlic, rosemary, thyme, and parsley to the dry ingredients. Mix with a wooden spoon until just combined into a shaggy dough. Do not overmix.
  3. Cover the bowl with plastic wrap and let the dough rest at room temperature for 12 to 18 hours. The dough will become bubbly and increase slightly in size.
  4. About 30 minutes before baking, place your 5 to 6-quart Dutch oven, with the lid on, into your oven. Preheat the oven to 450°F (232°C).
  5. Once preheated, carefully remove the hot Dutch oven from the oven. Gently scrape the dough onto a piece of parchment paper. You can lightly shape it into a round if desired, but avoid kneading.
  6. Using the parchment paper handles, carefully lower the dough into the hot Dutch oven. Place the lid back on.
  7. Bake covered for 30 minutes.
  8. Remove the lid and continue baking for another 15 to 20 minutes, or until the crust is deep golden brown.
  9. Carefully remove the bread from the Dutch oven and parchment paper. Let it cool on a wire rack for at least one hour before slicing.

Notes

  • For a stronger garlic flavor, roast the garlic cloves before mincing and adding them to the dough.
  • Rosemary and thyme pair best with garlic in this recipe. Avoid using too much parsley as it can release excess moisture.
  • Baking covered traps steam, which creates the best oven spring and crust.
  • If you prefer a softer crust, remove the bread from the Dutch oven for the last 10 minutes of baking.
