A rich, creamy fusion ramen bowl featuring tender chicken coated in a savory garlic parmesan sauce served over ramen noodles.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 2 packages instant ramen noodles (discard seasoning packets)
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt, pepper, and half of the Italian seasoning.
  2. Heat the olive oil in a large skillet or pot over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 1 minute until fragrant. Do not let it burn.
  4. Add the chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in the chicken broth and bring to a simmer. Scrape up any browned bits from the bottom of the pan.
  6. Stir in the heavy cream and the remaining Italian seasoning. Let the mixture heat through but do not boil rapidly.
  7. Stir in the grated Parmesan cheese until the sauce is smooth and slightly thickened.
  8. Add the ramen noodles to the simmering broth. Cook according to package directions, usually 3-4 minutes, until tender.
  9. Return the cooked chicken to the pot. Stir in the fresh spinach until it wilts, about 1 minute.
  10. Taste and adjust seasoning with salt and pepper if needed. Serve immediately, topped with extra Parmesan cheese.

Notes

  • For richer flavor, use the oil from the jar of sun-dried tomatoes instead of olive oil for sautéing.
  • If you prefer a thinner broth, substitute half of the heavy cream with whole milk.
  • You can use pre-cooked rotisserie chicken to speed up the process; add it in Step 6.
