- 2 large eggs
- 1/4 cup low-fat cottage cheese
- 1 whole wheat tortilla (medium size)
- 1 teaspoon olive oil
- 1/4 cup chopped spinach
- Salt and pepper to taste
- Heat olive oil in a small non-stick skillet over medium heat.
- Whisk eggs together in a bowl with cottage cheese, salt, and pepper.
- Pour the egg mixture into the hot skillet.
- As the eggs begin to set, gently push the cooked edges toward the center, tilting the pan to allow uncooked egg to flow underneath.
- When the eggs are mostly set but still slightly moist, add the spinach and cook for 30 seconds until wilted.
- Warm the tortilla briefly in a dry pan or microwave until pliable.
- Spoon the scrambled egg mixture onto the center of the tortilla.
- Fold in the sides of the tortilla, then roll tightly from the bottom up to form a wrap.
- Serve immediately.
Notes
- For meal prep, cook the egg filling ahead of time and store it in the refrigerator for up to three days. Assemble the wrap just before eating.
- You can substitute spinach with chopped bell peppers or mushrooms.
- Use a low-carb tortilla to reduce carbohydrate content.
