Ingredients
Scale
6 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon grated fresh ginger
Instructions
Pat the chicken thighs completely dry using paper towels. This step is crucial for crispy skin. Season both sides with salt and pepper.
Preheat your oven to 400°F (200°C). Place the chicken thighs skin-side up on a wire rack set over a baking sheet.
Bake for 25 minutes.
While the chicken bakes, prepare the glaze: In a small saucepan, combine honey, soy sauce, minced garlic, apple cider vinegar, and ginger. Heat over medium-low heat, stirring until the honey dissolves and the sauce thickens slightly, about 5 minutes. Do not boil.
Remove the chicken from the oven. Brush half of the honey garlic glaze evenly over the tops of the chicken thighs.
Increase the oven temperature to 425°F (220°C). Return the chicken to the oven and bake for another 10 minutes.
Brush the remaining glaze over the chicken. Switch the oven setting to broil (high). Watch carefully and broil for 1 to 3 minutes until the skin is deeply browned and very crisp. Do not let the sauce burn.
Remove from the oven and let the chicken rest for 5 minutes before serving.
Notes
For extra crispiness, you can let the dried, seasoned chicken sit uncovered in the refrigerator for up to 4 hours before baking.
Serve these thighs over steamed rice or with roasted broccoli.
If the glaze seems too thick after cooking, add a teaspoon of water to thin it slightly for drizzling.
