Prepare a complete, fresh chicken and rice bowl featuring a sweet and tangy honey lime sauce in under 30 minutes.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons olive oil
  • 3 cups cooked rice (use quick-cook or pre-cooked rice to meet time goal)
  • 1 large avocado, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup red onion, thinly sliced
  • Lime wedges, for serving

Instructions

  1. In a bowl, whisk together soy sauce, honey, lime juice, minced garlic, cumin, and chili powder to create the sauce.
  2. Place the cut chicken pieces in a separate bowl and pour half of the honey lime sauce over the chicken. Toss to coat and let it marinate while you prepare the rice (about 5 minutes). Reserve the remaining sauce.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 6 to 8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
  4. Pour the reserved half of the honey lime sauce over the cooked chicken in the skillet. Cook for 1 to 2 minutes, stirring constantly, until the sauce thickens slightly and coats the chicken. Remove from heat.
  5. Divide the cooked rice among four bowls. Top each bowl evenly with the honey lime chicken.
  6. Arrange the sliced avocado, chopped cilantro, and sliced red onion over the chicken and rice. Serve immediately with lime wedges.

Notes

  • Use pre-cooked or microwaveable rice to keep the total time under 30 minutes.
  • For extra flavor, you can quickly sear the chicken first, then add the sauce at the end.
  • If you prefer a spicier flavor, add a pinch of cayenne pepper to the sauce mixture.
