Prepare a complete and satisfying meal featuring tender honey mustard glazed chicken served over fluffy rice with roasted broccoli.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup uncooked white rice
  • 2 cups water
  • 1 head broccoli, cut into florets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • For the Sauce:
  • 1/2 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce (or tamari)
  • 1 clove garlic, minced

Instructions

  1. Cook the rice: Combine rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. Prepare the sauce: In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, soy sauce, and minced garlic until smooth. Set aside half of the sauce for serving.
  3. Roast the broccoli: Preheat your oven to 400°F (200°C). Toss the broccoli florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 12-15 minutes until tender-crisp.
  4. Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6-8 minutes.
  5. Glaze the chicken: Reduce the heat to medium-low. Pour the reserved half of the honey mustard sauce over the cooked chicken. Stir gently to coat the chicken evenly and allow the sauce to thicken slightly, about 1-2 minutes.
  6. Assemble the bowls: Divide the cooked rice among serving bowls. Top the rice with the glazed honey mustard chicken and the roasted broccoli florets. Drizzle the remaining fresh sauce over the top before serving.

Notes

  • For a quicker meal, use pre-cooked rice or a microwaveable pouch.
  • You can substitute brown rice or quinoa for white rice. Adjust cooking time for the grain accordingly.
  • If you prefer grilled chicken, marinate the pieces in half the sauce for 30 minutes before grilling.
