A recipe for cooking skin-on chicken thighs with a sweet and savory honey soy glaze, using a pan-sear and broil method to achieve crispy edges.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon vegetable oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Pat the chicken thighs completely dry with paper towels. This step is key for crispiness. Season the chicken skin lightly with salt and pepper.
  2. Heat the vegetable oil in an oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down in the hot skillet. Sear for 6 to 8 minutes until the skin is deeply golden brown and crispy. Do not move the chicken while searing.
  3. Flip the chicken thighs. Transfer the skillet to a preheated oven at 400 degrees Fahrenheit (200 degrees Celsius). Bake for 15 minutes.
  4. While the chicken bakes, prepare the glaze. In a small saucepan, combine the soy sauce, honey, minced garlic, grated ginger, and rice vinegar. Bring the mixture to a simmer over medium heat.
  5. In a separate small bowl, whisk together the cornstarch and water to create a slurry. Pour the slurry into the simmering sauce and stir constantly until the sauce thickens, about 1 minute. Remove from heat.
  6. Remove the skillet from the oven. Brush half of the honey soy glaze generously over the tops and sides of the chicken thighs.
  7. Return the skillet to the oven and switch the setting to broil (high). Broil for 2 to 4 minutes, watching constantly, until the glaze is bubbly and caramelized and the edges are very crisp.
  8. Remove the chicken from the oven. Brush with the remaining glaze before serving.

Notes

  • For the crispiest skin, ensure the chicken is cold and very dry before it hits the hot oil.
  • If you do not have an oven-safe skillet, transfer the seared chicken to a baking dish before adding the glaze and baking.
  • Serve immediately over steamed white rice with a side of steamed broccoli or green beans.
