Prepare a quick and flavorful shrimp bowl featuring shrimp coated in a sweet and savory honey soy glaze served over rice.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 cup cooked white rice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to make the glaze. Set aside half of the glaze for later.
  2. Pat the shrimp dry with paper towels.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the broccoli and carrots to the skillet and stir-fry for 3-4 minutes until slightly tender-crisp. Remove the vegetables and set them aside.
  5. Add the shrimp to the same skillet in a single layer. Cook for 1-2 minutes per side until pink.
  6. Pour the reserved half of the glaze over the shrimp and cook for 1 minute, tossing to coat until the sauce thickens slightly.
  7. Return the cooked vegetables to the skillet and toss everything together for 30 seconds to heat through.
  8. Divide the cooked rice among serving bowls. Top with the honey soy shrimp and vegetables.
  9. Drizzle the remaining fresh glaze over the bowls. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • You can substitute brown rice or quinoa for white rice.
  • For extra heat, add a pinch of red pepper flakes to the glaze mixture.
  • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce during the last minute of cooking.
