A simple, fresh salad combining sweet Honeycrisp apples, salty feta cheese, and crunchy pecans with a light maple vinaigrette.

Ingredients

Scale
  • 4 cups baby spinach or arugula
  • 2 Honeycrisp apples, cored and thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted pecans or walnuts
  • 1/4 cup dried cranberries (optional)
  • For the Dressing: 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Freshly ground black pepper to taste

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined. Set aside.
  2. Wash and dry the spinach or arugula. Place the greens in a large salad bowl.
  3. Slice the Honeycrisp apples thinly. If you are not serving immediately, toss the apple slices with a small amount of lemon juice to prevent browning.
  4. Add the sliced apples, crumbled feta cheese, toasted pecans, and dried cranberries (if using) to the bowl with the greens.
  5. Pour the dressing over the salad ingredients. Toss gently until everything is lightly coated.
  6. Serve immediately for the best texture.

Notes

  • To toast pecans, place them in a dry skillet over medium heat for 3 to 5 minutes, stirring often until fragrant.
  • For a more substantial meal, add 4 ounces of grilled chicken breast.
  • If you prefer a sweeter dressing, increase the maple syrup to 1.5 tablespoons.
