A simple, refreshing, non-alcoholic beverage blending pineapple and coconut flavors, perfect for a tropical treat.

Ingredients

Scale
  • 1 cup pineapple juice, chilled
  • 1/2 cup coconut cream (or full-fat coconut milk)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon simple syrup (adjust to taste)
  • 1 cup crushed ice
  • Garnish: Pineapple wedge and toasted coconut flakes

Instructions

  1. Measure the pineapple juice, coconut cream, lime juice, and simple syrup into a blender.
  2. Add the crushed ice to the blender.
  3. Blend on high speed until the mixture is smooth and slushy.
  4. Taste the mixture and add more simple syrup if you prefer it sweeter.
  5. Pour the mocktail into a tall glass.
  6. Garnish the rim with a fresh pineapple wedge and sprinkle toasted coconut flakes over the top.
  7. Serve immediately.

Notes

  • For a creamier texture, use chilled coconut cream instead of coconut milk.
  • If you do not have crushed ice, use standard ice cubes and blend longer.
  • To make simple syrup, mix equal parts sugar and hot water until the sugar dissolves, then cool completely.
  • For a dairy-free option, ensure your coconut cream does not contain added dairy stabilizers.
