Make flavorful shredded chicken and brown rice together in your Instant Pot for a fast, easy weeknight meal base.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup long-grain brown rice, rinsed
  • 1.5 cups chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Juice of 1 lime (for finishing)

Instructions

  1. Add olive oil to the inner pot of your Instant Pot and select the Sauté function.
  2. Season the chicken breasts on all sides with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Place the seasoned chicken in the hot pot and sear for 2 minutes per side until lightly browned. Remove the chicken and set it aside.
  4. Add the rinsed brown rice and chicken broth to the pot. Scrape the bottom of the pot with a wooden spoon to release any browned bits.
  5. Place the seared chicken breasts on top of the rice mixture. Do not stir.
  6. Secure the lid and set the valve to Sealing. Select Manual or Pressure Cook (High Pressure) for 20 minutes.
  7. When the cooking time finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
  8. Remove the chicken breasts and place them in a bowl. Use two forks to shred the chicken.
  9. Stir the lime juice into the shredded chicken.
  10. Fluff the brown rice with a fork. If the rice seems too wet, place the lid back on for 5 minutes on Keep Warm without sealing.
  11. Serve the shredded chicken over the brown rice. Top with your preferred burrito bowl toppings.

Notes

  • For faster cooking, you can use white rice, reducing the cook time to 3 minutes on High Pressure with a 10-minute NPR.
  • If you prefer a saucier chicken, add 1/4 cup of salsa or taco seasoning mix with the broth.
  • This recipe makes excellent meal prep components; store the rice and chicken separately.
