Make a rich, creamy potato soup quickly using your Instant Pot. This recipe includes bacon for flavor and achieves a smooth texture easily.

Ingredients

Scale
  • 1 pound bacon, cut into pieces
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1.5 pounds Russet potatoes, peeled and cubed (about 1 inch)
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup half-and-half or heavy cream
  • 4 ounces cream cheese, cubed
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Set the Instant Pot to the Sauté function. Add the cut bacon and cook until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant. Press Cancel.
  3. Add the cubed potatoes, chicken broth, salt, and pepper to the pot. Stir gently.
  4. Secure the lid and set the vent to Sealing. Cook on High Pressure for 6 minutes.
  5. When the cooking cycle is complete, perform a Quick Release of the pressure.
  6. Remove the lid. Stir in the half-and-half and the cubed cream cheese until the cheese melts completely.
  7. If you prefer a thicker soup, stir in the cornstarch slurry. Set the Instant Pot to Sauté (Low) and cook, stirring constantly, until the soup thickens, about 2 to 4 minutes.
  8. Stir in the shredded cheddar cheese, if using, until melted.
  9. Ladle the soup into bowls. Top each serving with the reserved crisp bacon pieces.

Notes

  • For a smoother texture, use an immersion blender directly in the pot to blend about half of the soup before adding the dairy.
  • If you do not have bacon, you can substitute 1/2 cup of diced ham or omit the meat entirely.
  • Use starchy potatoes like Russets for the best creamy results.
