A simple, one-pot recipe for making cheesy lasagna quickly in your Instant Pot, minimizing layering and cleanup.

Ingredients

Scale
  • 1 pound ground beef or Italian sausage
  • 1 teaspoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 24 ounces jar marinara sauce
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 oven-ready (no-boil) lasagna noodles, broken into 2-inch pieces
  • 1 1/2 cups water
  • 2 cups shredded mozzarella cheese

Instructions

  1. Set the Instant Pot to the Sauté function. Add olive oil and brown the ground meat. Drain excess fat.
  2. Add the chopped onion and cook until soft, about 3 minutes. Add the minced garlic and cook for 1 minute more. Press Cancel.
  3. In a medium bowl, mix the ricotta cheese, egg, 1/2 cup Parmesan cheese, basil, oregano, salt, and pepper.
  4. Pour 1 cup of water into the Instant Pot liner. Scrape up any browned bits from the bottom.
  5. Layer half of the broken lasagna noodles over the meat mixture. Spread half of the ricotta mixture over the noodles.
  6. Pour half of the marinara sauce over the ricotta layer. Repeat the layering process with the remaining noodles, ricotta mixture, and marinara sauce.
  7. Pour the remaining 1/2 cup of water over the top layer.
  8. Cover the Instant Pot and set the valve to Sealing. Cook on Manual/Pressure Cook setting on High for 8 minutes.
  9. When cooking finishes, allow a Natural Pressure Release for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
  10. Remove the lid. Sprinkle the mozzarella cheese evenly over the top. Let it sit for 5 minutes to melt, or use the Sauté function briefly if needed.
  11. Serve immediately, topping each portion with extra Parmesan cheese.

Notes

  • Using oven-ready noodles saves time because you skip the boiling step.
  • If you prefer a soupier texture, increase the water to 2 cups and reduce the cook time to 6 minutes.
  • For a richer flavor, use Italian sausage instead of ground beef.
