Make these easy baked jalapeño poppers for a spicy, cheesy appetizer perfect for game night. Control the heat by carefully removing the seeds.

Ingredients

Scale
  • 12 large jalapeño peppers
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • Optional: 12 strips thin-cut bacon (for bacon wrapped poppers)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the jalapeños: Wear gloves to protect your hands. Slice each jalapeño lengthwise down one side, creating a pocket. Gently scoop out the seeds and white membranes using a small spoon or knife. This step controls the heat level.
  3. Make the filling: In a medium bowl, combine the softened cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until completely smooth and uniform.
  4. Fill the peppers: Spoon or pipe the cheese mixture evenly into each jalapeño half. Do not overfill.
  5. Prepare for baking: If you are making bacon wrapped poppers, wrap one thin strip of bacon around each filled pepper, securing it with a toothpick if necessary.
  6. Coat the poppers: In a small bowl, toss the panko breadcrumbs with the melted butter. Sprinkle the breadcrumb mixture evenly over the tops of the filled peppers.
  7. Bake: Place the poppers on the prepared baking sheet. Bake for 18 to 22 minutes, or until the peppers are tender, the cheese is bubbly, and the breadcrumbs are golden brown.
  8. Serve immediately while hot.

Notes

  • Wear gloves when handling jalapeños to prevent skin irritation from the capsaicin.
  • For less heat, remove all seeds and white pith; for more heat, leave some seeds inside the filling.
  • If you skip the bacon, you can lightly spray the tops with cooking spray before adding the breadcrumbs for better browning.
