Ingredients
Scale
1.5 lb ground beef
4 slices bacon, cooked and crumbled
1 medium onion, chopped
2 stalks celery, chopped
4 cups beef broth
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce (check carbs)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
8 oz cream cheese, cubed
1 cup heavy cream
2 cups shredded sharp cheddar cheese
1/4 cup dill pickle relish (or finely diced pickles)
1 tablespoon xanthan gum (optional, for thickening)
Instructions
Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off excess grease.
Add the chopped onion and celery to the pot with the beef. Cook until the vegetables soften, about 5 to 7 minutes.
Pour in the beef broth. Add the Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Bring the mixture to a simmer.
Reduce the heat to low. Stir in the cubed cream cheese until it melts completely and the soup base is smooth.
Stir in the heavy cream. Continue to heat gently, but do not boil.
If you want a thicker soup, whisk the xanthan gum into a small amount of cold water first to create a slurry, then slowly whisk the slurry into the simmering soup until desired thickness is reached.
Remove the pot from the heat. Stir in the shredded cheddar cheese until fully melted and incorporated.
Stir in the diced pickles or relish.
Ladle the soup into bowls. Top each serving with crumbled bacon.
Notes
For a slow cooker method, brown the beef and sauté the vegetables first. Transfer everything except the cheese and cream to the slow cooker. Cook on low for 4 hours. Stir in the cream cheese, heavy cream, and cheddar during the last 30 minutes of cooking.
If you omit xanthan gum, the soup will be thinner, similar to a broth-based soup.
Use high-quality sharp cheddar for the best flavor payoff.
