Make these simple, flavorful roll-ups that taste like an Italian sub but use provolone cheese slices instead of bread. This recipe is perfect for a quick, low-carb lunch or snack.

Ingredients

Scale
  • 8 large slices provolone cheese
  • 4 slices Genoa salami
  • 4 slices thinly sliced ham
  • 4 slices capicola or mortadella
  • 1/4 cup sliced black olives
  • 1/4 cup sliced pepperoncini peppers
  • 2 tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Pinch of salt and black pepper

Instructions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper to create the dressing.
  2. Lay out two slices of provolone cheese side-by-side, slightly overlapping them to create a larger surface area for wrapping.
  3. Layer the meats: place one slice of salami, one slice of ham, and one slice of capicola over the overlapped cheese area.
  4. Sprinkle a small amount of sliced olives and pepperoncini peppers down the center of the meat stack.
  5. Drizzle about 1/2 teaspoon of the prepared dressing over the fillings.
  6. Starting from one short end, tightly roll the cheese and meat layers into a compact cylinder.
  7. Repeat the process for the remaining ingredients to make four roll-ups.
  8. If the roll-ups are too loose, secure them with a toothpick inserted through the center.
  9. Serve immediately or wrap individually in plastic wrap for meal prep.

Notes

  • For extra stability, you can use two slices of deli meat (like turkey or ham) as the base layer before adding the provolone cheese.
  • If you prefer a stronger Italian flavor, add a thin layer of cream cheese mixed with Italian seasoning onto the provolone before adding the meats.
  • These roll-ups hold well in the refrigerator for up to three days if wrapped tightly.
