A simple, hearty, and low-carb soup recipe featuring ground beef, perfect for a ketogenic diet.

Ingredients

Scale
  • 1.5 lb ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained (check for no added sugar)
  • 1 (10 oz) can Rotel (diced tomatoes and green chilies), undrained (check for no added sugar)
  • 4 cups beef broth
  • 1 packet (1 oz) low-carb taco seasoning (check label for no starch/sugar)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground beef, onion, and bell pepper. Cook until the beef is browned and vegetables are soft, breaking up the meat as you cook. Drain off any excess grease.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the diced tomatoes, Rotel, beef broth, taco seasoning, cumin, chili powder, salt, and pepper to the pot.
  5. Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 20 minutes to allow flavors to combine.
  6. Taste and adjust seasonings if necessary before serving.

Notes

  • For a slow cooker method, brown the beef and sauté the vegetables separately, then combine all ingredients in the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  • Serve hot with keto-friendly toppings like shredded cheddar cheese, sour cream, avocado slices, or chopped cilantro.
  • To make this dairy-free, omit sour cream and cheese toppings.
  • If you prefer a thicker soup without adding carbs, you can simmer uncovered for the last 15 minutes to reduce the liquid slightly.
