Ingredients
Scale
1 tablespoon vegetable oil
1 pound ground beef (80/20 recommended)
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup soy sauce
1/4 cup packed brown sugar
2 tablespoons water
1 tablespoon sesame oil
1 teaspoon cornstarch
Cooked white or brown rice, for serving
Optional garnishes: sliced green onions, sesame seeds
Instructions
Heat the vegetable oil in a large skillet over medium-high heat.
Add the ground beef to the skillet and cook, breaking it apart with a spoon, until fully browned. Drain any excess grease.
Add the minced garlic and grated ginger to the skillet with the beef. Cook for 1 minute until fragrant.
In a small bowl, whisk together the soy sauce, brown sugar, water, sesame oil, and cornstarch until the cornstarch is dissolved.
Pour the sauce mixture over the ground beef in the skillet.
Bring the mixture to a simmer, stirring constantly. Cook for 2 to 3 minutes until the sauce thickens enough to coat the beef.
Remove from heat.
To assemble the bowls, spoon the cooked rice into serving bowls. Top with the Korean ground beef mixture. Garnish with sliced green onions and sesame seeds, if desired.
Notes
For meal prepping, store the cooked beef mixture and rice separately. Reheat the beef mixture before serving.
You can substitute brown sugar with honey or maple syrup if you prefer.
If you like a spicier flavor, add 1 teaspoon of Gochujang (Korean chili paste) to the sauce mixture.
