Ingredients
Scale
1/2 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup olive oil
4 cloves garlic, minced
1 tablespoon Dijon mustard
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon salt
4 bone-in pork chops (about 1 inch thick)
Instructions
In a medium bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, Dijon mustard, oregano, pepper, and salt to create the citrus garlic pork chop marinade.
Place the pork chops in a large zip-top bag or a shallow dish.
Pour the marinade over the pork chops, making sure they are fully coated.
Seal the bag or cover the dish. Refrigerate for at least 2 hours, or up to 8 hours for the best flavor. An overnight pork marinade works well if you plan ahead.
Remove the pork chops from the marinade, letting excess drip off. Discard the remaining marinade.
Cook the pork chops using your preferred method, such as grilling over medium heat for 5-7 minutes per side, or baking at 400 degrees Fahrenheit until the internal temperature reaches 145 degrees Fahrenheit.
Notes
For a low-sodium hack, reduce the added salt in the marinade to 1/4 teaspoon. The citrus still provides bright flavor.
If you prefer a sweeter profile, you can substitute 2 tablespoons of honey for 2 tablespoons of the orange juice to make a honey mustard pork chops variation.
This easy pork marinade works well for both thick and thin cuts. Adjust cooking time as needed for thickness.
